The Fenzheng Paigu (Steamed Pork Ribs with Rice Flour) is cooked for over 4 hours, resulting in extremely tender meat that falls off the bone. However, some may find the texture of the accompanying beans to be hard, and the long cooking process gives it a distinct traditional flavor.
The Shuidochi Bao Yaohua (Stir-fried Pork Kidney with Fermented Black Beans) contains many chili peppers but is not very spicy. The knife work on the kidney might lead to some pieces being slightly tough.
The Gongbao Jiding (Kung Pao Chicken) has soft and tender chicken, but the small lychee flavor is not prominent. The chili peppers might be overcooked/burnt, and the dish can be slightly oily.
